In my experience, nothing but nothing is as complete, powerful, and flexible as Phil Harvey's exiftool, a free and easy-to-use command-line tool that runs virtually everywhere imaginable. (There's also a free library for programmers who care to roll er craft their own special-purpose tools.)
It can do millions and millions of things. I've never seen anything that's in the same ballpark for power. In particular, even if you're happy with what you now use, I encourage everyone to see for themselves these examples of reading, writing, copying tags to get a feel for what I mean about power and flexibility:
