D700 + 80-200/2.8 question

I will have to do a dance job with my (fresh from the box) D700. My former camera was a D70, so I've just added a zero to the equation!

I chose the D700 for its low pixel density allowing high ISO capabilities. But, believe me, stage lighting here is abysmal and I'll have to use a shutter speed of at least 1/250s with the 80-200 f/2.8 (to freeze moving dancers), so I'll have to work in really dim conditions with the new camera and with no experience for the new tool.

Do you believe I'll get a better IQ by stopping down the lens a little and pushing the ISO up? Or should I shoot wide open?

Let's say, should I use f/2.8 - ISO 3200 or f/4 - ISO 6400 with this camera/lens combination?
