F200 EXR Long Exposures

I have been playing around with this camera trying to take some decent long exposures and was looking for some tips on some good settings.
Not sure if its possible or if a SLR is needed but some examples are:
First I have been trying to take day shots of flowing water where you get that nice kinda blur effect off the moving water but everything else stays in focus when the camera is steady of course.
Second I am trying to take photos night of buildings or objects lit up by lights directed at a wall for example and bring in more of the colour and making it bolder if that makes sense.
So any tips on what settings (shutter, aperture etc.) would be greatly appreciated.
